The team of the Department of Restaurant, Hotel, and Travel Business at the Education and Research Institute “Ukrainian Engineering Pedagogics Academy” of V. N. Karazin Kharkiv National University is introducing innovative approaches to education thanks to a grant received by Associate Professor Hanna Zaparenko under the House of Europe Alumni Support Programme.
The grant funds were used to purchase a set of professional equipment for implementing the sous vide technology, namely: a Hurakan low-temperature cooking device, a Lavezzini vacuum sealer, embossed vacuum bags, and a gastronorm container.
Sous vide technology is part of molecular gastronomy and involves cooking food in a vacuum at low temperatures. This method makes it possible to produce higher-quality, more flavourful dishes while preserving a greater amount of nutrients and biologically active compounds, thereby supplying the human body with dietary components that are often deficient.
The acquired equipment will be used in the educational process under the “Innovative Food Technologies” programme in specialty G13 “Food Technologies”, as well as in research projects carried out by students.
The project was implemented on the initiative of Associate Professor Hanna Zaparenko with the participation of Senior Lecturer Ivan Halyasnyi.
